Natural with one specification: the lemon gelatin is specified gluten-free (flavored gelatin mixes are a check-the-label category); no flour or other gluten ingredient appears in the original. Filed time includes the original's two chilling stages, which the original describes but does not time; the stage times given are editorial estimates, disclosed here.
Lemon gelatin carrying finely cut green pepper, carrot, celery, and radish, molded and turned out on salad greens. A 1976 molded salad, six half-cup servings.
Why this complexity: Vegetables go in only when the gelatin begins to thicken, so they stay suspended instead of sinking; Molds must chill until fully set before unmolding.
Ingredients
- 1 package (3 ounces) gluten-free lemon-flavored gelatin
- 1 teaspoon unflavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 teaspoon finely chopped onion
- 1/2 teaspoon salt
- 1/4 cup chopped green pepper
- 1/4 cup shredded carrots
- 1/4 cup diced celery
- 1/4 cup thinly sliced radishes
- 6 salad green leaves
Method
- Mix the flavored and unflavored gelatin. Dissolve in the boiling water. Add the cold water, onion, and salt.
- Chill in the refrigerator until the mixture begins to thicken, about 45 minutes.
- Gently stir in the green pepper, carrots, celery, and radishes. Pour into a 1-quart mold or six individual molds.
- Chill until set, at least 2 hours.
- Unmold on the salad greens and serve cold.
