Crunchy Pumpkin Pie
Awaiting Trial Recipe version 1 · Filed by the Court (seed pool) · Adapted from 'Crunchy Pumpkin Pie' — from 'Keep the Beat: Heart Healthy Recipes' by the US Department of Health and Human Services, National Heart, Lung, and Blood Institute (public domain, federal), as carried in USDA MyPlate Kitchen materials. Converted to gluten-free: quick-cooking oats specified as certified gluten-free oats, and 1/4 cup whole wheat flour replaced with 30 g (1/4 cup) gluten-free 1:1 baking blend containing xanthan gum (straight swap for a press-in crumb crust); no other changes.
A press-in crust of certified gluten-free oats, ground almonds, and gluten-free blend holds a lightly sweet pumpkin filling spiced with cinnamon and nutmeg.
Why this complexity: press-in crust work with two swaps: certified gluten-free oats and gluten-free blend for wheat flour; custard filling doneness check.
Ingredients
- 1 cup certified gluten-free quick-cooking oats
