Category: DessertsServes: 12Time: 300 minComplexity: 2/5

Why this complexity: two-stage mandatory chill until set.

Ingredients

  • 2 cups boiling water
  • 1 package (8-serving size) sugar-free cherry gelatin
  • 1/2 teaspoon cinnamon
  • 1 can (20 ounces) pineapple chunks in juice, undrained
  • 1 can (22 ounces) mandarin oranges in juice, drained
  • 16 large ice cubes

Method

  1. Pour the boiling water into a large bowl. Add the gelatin and cinnamon and stir for at least 2 minutes, until the gelatin is completely dissolved.
  2. Drain the pineapple, reserving the juice. Add enough ice to the juice to measure 1 1/2 cups, add it to the gelatin mixture, and stir until the ice is completely melted.
  3. Refrigerate for about 45 minutes, or until the gelatin is slightly thickened (the consistency of unbeaten egg white).
  4. Reserve 1/4 cup each of the pineapple and the oranges. Stir the remaining pineapple and oranges into the gelatin and pour into a 1 1/2-quart serving bowl.
  5. Refrigerate for 4 hours, or until firm.
  6. Garnish with the reserved pineapple and oranges and serve.
